Definitely need a reservation and we did the 50 minute reservation as 12 pieces was enough for us. Hong has earned his cred—The New York Times has noticed from the opposite coast—by emphasizing the best ingredients. The food and service was amazing! Only regret, my in laws just returned to Japan and we did not take them here. Most of the workers were all Korean and they're all trained under a Korean-American chef. You won’t be hungry after 90, but the side menu is also amazing. Too controlled of an experience. The chefs are friendly and happy to answer questions. That said, the amount of sushi you got is not that much. There's a wide assortment of saki and a few wines. The chef was very friendly, described every piece he prepared and answered every question we had. This was the first time my wife and I dined here. There is no soy sauce at the bar and most dishes were paired with roe or truffles or other fish making so hard to gauge the quality and freshness.
